ORIGINAL LITTLE DERBY

A ‘ little’  derby is a traditional cheese which has been made out of county and matured longer than the normal length of time. Open texture with smooth creamy body and a mature 9 months of nutty flavour only comes from over 300 years of knowledge passed down over 14 generations. A whole cheese can be bought cloth bound, smaller sizes come washed in red wine and packed for convenience.

FOREST BLUE

Made by hands, blued by hands, selected and presented by hand, totally traditional. Piquant and mild in flavour which can be taken beyond its maturity for extra depth of strength for personal preference.

WARWICKSHIRE CLOTHBOUND TRUCKLE

First made in 1933 as the Milk Marketing Board was born. 12 months minimum maturity for this 6kg clothbound cheese. Drier and harder than all our others with a great deal of depth of flavour for the purists of rinded cheeses.
